For the Rib Marinade:
1/3 cup soy sauce
1/3 cup sugar
1/2 cup water
2 tsp minced garlic
1 tsp sesame oil
Pinch of pepper
For the Peanut Sauce:
Combine and blend the following
1 inch ginger, peeled
1 clove garlic
1 tablespoon honey
1 teaspoon Sriracha
1⁄2 cup peanut butter
1⁄4 cup tamari
1 tablespoon rice vinegar
1 tablespoon toasted sesame oil
1 red bell pepper, julienned.
Place short ribs in a baking dish and pour marinade over. Leave for a couple hours - overnight if possible.
Make the Pad Thai Noodles as directed, rinse under cold water, mix in the peanut sauce, and refrigerate until ready to serve.
Heat a grill pan on high and add the peppers and ribs. Cook the ribs for 4-6 minutes per side. Remove from heat and cut the meat off the bone into bite-sized bits.
Add the meat and peppers over the noodles, and top with green peppers for garnish.
